What is ASTA colour value, and why does it matter?
Paprika is bought on colour. The ASTA colour value is the industry standard for measuring the extractable red colour of paprika — the higher the number, the more colouring power per unit. Commercial paprika powder typically spans roughly 60 to 240 ASTA depending on variety and grade; the number drives both price and how far a given weight will colour a product.
Sweet pepper from Xinjiang's colour-pepper belt — varieties such as Red Dragon 23 and US Red — is the benchmark for high colour at low heat, and is the standard raw material for paprika oleoresin (natural red colour E160c).
Sweet paprika vs low-heat paprika
The two grades serve different jobs, and the difference is heat:
- Sweet paprika (under 500 SHU) — pure colour, no perceptible heat. For food colouring, sausage and processed-meat colouring, and oleoresin extraction.
- Low-heat paprika (under 10,000 SHU) — colour plus a clear chilli aroma and gentle warmth. For spice blends, marinades and snack seasoning where colour alone is not enough.
